German potato Salad : My Mom's
( make a large batch)

5 lbs new potatoes 1 tbsp salt
1/2 lb bacon 2 tbsp cornstarch
1/2 cup vinegar 1/4 cup sugar
1 tbsp salt 1/4 tesp black pepper
2 cups water 1 cup chopped onions
1/2 cup chopped celery

Cook potatoes w/peeling on them & 1 tbsp salt, drain cool. Remove peels and
slice. Fry bacon crisp drain then crumble. Pour off all but 1/2 cup bacon
drippings. Combine cornstarch , vinegar and stir well. Add constarch mix, sugar,
1 tbsp salt, pepper & water to bacon drippings. Cook over med. heat, stir
constantly until thickens. Pour hot sauce over potatoes, onions celery & bacon
crumbs. toss gently, serve hot.

Baked Beans
2 cans of pork and beans
four slices of bacon
1 teaspoon of mustard
1/2 cup of bbq sauce
1/2 cup of ribbon cane syrup
mix beans syurp mustard together, spray large baking pan with non stick spray,pour in bean mixture, place slices of bacon on top. Bake @ 350 until bacon is done

Dirty Rice :My Mom's

1 lb ground beef
1 onions, chopped
1 lb. pan sausage
(Jimmy Dean or Owens)
1 1/2 cup uncooked rice
1 cup chopped celery
Red pepper flakes to taste
1 bell peppers, chopped
Cook rice in water until tender. In skillet saute first 5 ingredients untio leat
is lightly browned & veggies tender. Combine all ingredients in large roasting
pan and bake in oven for 45 min at 400*.

Ranch Potato's

6 med size potato's
peeled cut into chunks..boil
drain water
add ranch dressing and stir
serve while hot

Scallope Potato's
4-6 large potato's,peal slice thin round layer in baking dish,
chopped onion sprinkle 1 tbls flour
1 tbsp butter
salt&pepper
layer until pan is 3/4 full. pour one can evaporated milk cover. bake @350 for 30 -45 min or untill tender
sprinkle with grated cheese.

Uncle Rick's potatoes:
Take about 6-7 good size potatoes and peel them, cut them to boil, let them get almost done, drain well (don't smash them), put butter in them, (shell always said till they looked yellow), mix up 1 pkg. of ranch dressing according to directions w/sour cream, add to potatoes, add grated cheddar cheese, mix good, pour into deep dish pan and sprinkle a little more cheese on top and sprinkle a little parsley on top and bake for about 40 to 45 minutes. Some people call this twice baked, but the kids loved it, cause Uncle Rick did and that is why they called it Uncle Rick's potatoes.

NUT's Baked Mac&Cheese

3 cups elbow macaroni
1 Lb. sharp Cheddar cheese, cut into chunks
2 tablespoons butter or margarine, cut into chunks
1 cup milk

pepper to taste.....(no need 4 salt.....cheese is salty)

Heat oven to 375 degrees. Cook macaroni according to package instructions minus 5 minutes (lol); drain. Put macaroni in a casserole dish. Add cheese and butter. Stir well and top w/ buttered cracker crumbs. Bake for 40 minutes or until top is brown and crunchy and/or you see bubbles...LOL!

Cheese Filled Jumbo Shells by (brownieyedgirl)
1 box (12oz) Jumbo Shells, uncooked
4 c. (2 lb.) ricotta cheese (let the cheese set out a little bit to soften, makes mixing easier)
2 c. (8oz shredded mozzarella cheese
c. grated Parmesan (let cheese soften)
3 eggs
1 TLB. chopped fresh parsley (this is optional, if youre cheating, like me, & using a bottled sauce that has that ingredient.)
Tsp. Dried oregano leaves (also optional)
tsp. Salt (also optional, if using bottled sauce)
tsp. black pepper (also optional)
3 cups (28oz jar) spaghetti sauce (I usually use 2 jars of 5Brothers w/2lbs of ground round (already cooked of course). Thats where I usually put in my salt & pepper
Heat 5 quarts or whatever, lol, w/1 Tlb. of salt to rolling boil.
Gradually stir in pasta: return to boiling. Boil uncovered, 10 minutes, stirring occasionally. DO NOT OVERCOOK.
Drain well. Cool in single layer on wax paper or foil to keep from sticking together. Combine cheeses, eggs, parsley, oregano, salt, & pepper. Fill each shell w/abt 2 tlb. cheese mixture.
Spread thin layer of sauce on bottom of 13x9 inch baking pan. Place shells on top of sauce; cover w/remaining sauce. Sprinkle w/additional Parmesean (optional, I dont) cheese, if desired. Cover w/aluminum foil; bake at 350 for about 35 mins. or until hot & bubbly. I have also not covered, & baked for 30 mins. Covering makes more saucy. Uncovered, puffs out the shells more. Its not as saucy, but not dry either. ENJOY!
